NOW® Sunflower Liquid Lecithin has Phosphatidyl Choline, the most abundant phospholipid in the cell membrane. It also naturally abounds in Phosphatidyl Inositol, Phosphatidyl Ethanolamine, and essential fatty acids. Lecithin aids in emulsifying fats, enabling them to be dispersed in water.
Suggested Usage
Blend 1 tablespoon into milk, protein shakes or vegetable juice. May also be used in salad dressings/sauces (as an emulsifier of fats) or as a non-stick coating on pots and pans.

An excellent emulisifier for making thin sauces without flour

I spent a couple of years experimenting with lecithin granules, but finally desisted as I detected a slight disagreeable taste, and granules were not very easy to use.nnLiquid lecithin seems to have no taste and is instantly soluble in fats (but not in watery liquids (contrary to the information on this website). It behaves rather similarly (in quantity, and emulsifying properties) to dish liquid. I use it regularly for quick sauces (eg butter with pan juice), to reincorporate residual fat rising to the surface of stock, when cake batter looks grainy, and I shall try the suggestion on this website as a release agent for cakes. An example: to create a delicate sauce in which to poach fish without swamping it, I use lecithin to emulsify butter, wine, lemon juice in which to cook garlic to the desired picquancy before warming through the fish.
